BIRCH SMOKED SALT CARAMEL

CARAMEL:

1 stick butter
1 cup cream
4 tbsp. water
8 tsp. glucose syrup
1 cup sugar
Saltverk birch smoked salt

Mix the water, glucose and sugar in a pot and warm up to 320°F. In another pot, warm up the butter and cream and mix together. Slowly and carefully blend the butter and cream mixture into the contents of the first pot. Heat to 240°F. Pour mixture into greased baking form. Sprinkle salt on top immedi- ately. Allow to cool.
